BBQ Cauliflower Wings

Ingredients

  • 1 head of cauliflower
  • 150ml of coconut milk
  • 50ml of water
  • 100g of plain flour
  • 1tsp +1/4tsp of garlic powder
  • 2tbsp of olive oil
  • 1/2tsp of salt
  • 1/4tsp of paprika
  • 275ml of Newman’s Own Sticky BBQ
  • Spring onions, poppy seeds and lemon wedges to garnish

Method

  1. Wash and cut the cauliflower head into florets
  2. Preheat your over to 200C degrees
  3. Mix coconut milk, water, flour and seasonings in a bowl until the batter is thick
  4. Dip the cauliflower one by one in the batter, shake off excess batter and place them single layer on a baking sheet lined with parchment paper
  5. Bake for 20 minutes until golden brown, flipping the florets over halfway through to get all sides golden brown and crispy
  6. In the meantime, pour Newman’s Own Sticky BBQ in a bowl and add olive oil, mix well. If you prefer it more spicy, add some tabasco or chilli flakes
  7. Once the cauliflower is done, remove from the oven and toss all the baked florets with the BBQ sauce to coat evenly
  8. Return the cauliflower florets in the oven and bake for 15 minutes
  9. If serving with rice, then prepare it in this time
  10. Serve the cauliflower wings with spring onions, poppy seeds and lemon wedges
