Barley Summer Salad

Ingredients
- 160g of barley
- 200g of roasted ham
- 160g of Emmental cheese
- 150g of cherry tomatoes
- 75g of black olives
- Handful of fresh basil
- 60ml of Newman’s Own Italian dressing
Method
- Start by placing the barley in a saucepan filled with cold water and a handful of coarse salt, then cook according to the package instructions
- Cut the roasted ham and Emmental cheese into small cubes
- Wash and rinse the black olives and cherry tomatoes, slicing them to your preference
- Once the barley is cooked, drain it and transfer it to a separate bowl. Toss the barley with olive oil to prevent it from becoming sticky
- Next, when the barley is cold, add all the prepared ingredients, along with a handful of fresh basil
- Pour in the Newman’s Own Italian dressing, mix well, and serve
