Mediterranean Roast Vegetable Salad
Ingredients
1 red capsicum, cut into thick strips
3 zucchini, sliced into thick rounds
4 ripe tomatoes
halved
1 red onion, quartered
2 tbsp olive oil
200g bocconcini
1/4 cup Newman’s Own Balsamic Dressing
1 handful of basil
Method
Preheat oven to 200C.
Combine the capsicum, tomato, zucchini, onion and a good splash of olive oil in a baking tray and cook for 35 minutes or until the vegetables are cooked through.
Transfer to large bowl and while still hot, dress with Newman’s Own Balsamic Dressing. Add the basil and bocconcini and gently toss to combine.
