Boursin loaded Baguette with Creamy Mediterranean Dressing

Ingredients

• 1 large crusty baguette
• 1 pack Boursin Garlic & Herbs, small splash of water, to loosen dressing if needed
• 2 grilled chicken breasts, sliced
•  4 tbsp Newman’s Own Creamy Mediterranean Dressing
•  Roasted red peppers, sliced
•  1 large tomato, sliced
•  Handful of rocket
•  Fresh basil leaves
• Cracked black pepper
• Extra virgin olive oil, optional

Method

1. Slice the baguette lengthways and spread a generous layer of Boursin Garlic & Herbs across both sides.
2. Layer the rocket, grilled chicken, roasted peppers and tomato along the length of the baguette.
3. Finish with a generous drizzle of Newman’s Own Creamy Mediterranean Dressing, fresh basil leaves and cracked black pepper. Add a drizzle of olive oil if desired.
4. Close the baguette, gently press together and slice into picnic-sized portions before wrapping in baking paper.
