Veal with Warm Potato Ranch Salad

Serves: 4

INGREDIENTS

4 veal leg steaks
4 slices pancetta
2 tsp (10 ml) olive oil
Chopped fresh chives, to garnish

Warm Potato Ranch Salad
17 oz (500 g) new potatoes, halved
2 avocados, sliced
2 tomatoes, cut into wedges
1/2 red onion, thinly sliced
Salt & pepper, to taste
6 tbsp bottle Newman’s Own Ranch Salad Dressing

 


RECIPE

1. To make salad, boil, steam or microwave potatoes until tender. Drain. Combine warm potatoes, avocados, tomatoes and red onion in a bowl. Season with salt and pepper. Add dressing, toss gently to combine.

2. Place veal on a chopping board. Arrange pancetta over top. Flatten gently with a meat mallet.

3. Heat oil in a non-stick fry pan. Add veal. Cook on both sides, for about 1 1/2 minutes until browned and tender. Remove and cover. Stand veal for 3 minutes before cutting in half.

4. Serve veal with salad. Garnish with chopped fresh chives.
